What you need:

30g finely ground Wylie’s Coffee (recommend: Brazil Peaberry)

300ml hot water, plus more to rinse the paper filter

200g of ice, plus more to serve

2-cup V60 and paper filter

Decanter

Optional: Timer & scales

Method:

1. Put your water on to boil.

2. Put your filter paper in the V60 and rinse with a little hot water. Avoid doing this over your decanter so you don’t warm your decanter.

3. Add 200g of ice into your decanter and sit the V60 on top.

4. Add your ground coffee to the V60 giving it a small shake to make sure all the grounds are level.

5. Wet the grounds with 70ml of hot water.

7. When the water has drained, start pouring water again over the grounds, slowly in a circular motion, topping up to 300ml of water by 3-minutes.

8. Once the bed has fully drained (ideally no longer than 3 ½-minutes total), remove the V60 and stir the brewed coffee and ice together until fully mixed.

9. Pour into glasses over lots of ice to keep it chilled.

10. Enjoy it black or with a splash of milk.
